Brilliant Pita Sandwiches

1/2 cucumber, peeled & chopped
1/2 small red onion, finely chopped
10-15 kalamata olives, finely chopped
6 basil leaves, finely chopped
6 mint leaves, finely chopped
1/2 c. plain yogurt
juice of 1/2 lemon
4 oz. (1/2 c.) feta cheese, crumbled

Mix all ingredients together in a large bowl. Offer with pitas, lettuce and avocado. This mixture fills 4 half-pitas. (2 servings)

Girl, you are so healthy. I feel like all you eat now are vegetables and brown stuff. Why does healthy food always have to be brown instead of white? Are you going to be one of those moms whose kids have their first taste of sugar at VBS snacktime or something? :)

Yep. And they'll be like, "EWWW!"

p.s. - healthy food is brown because that's what color wheat and sugar are before they're BLEACHED! (kind of like your teethyyyyyyyyyyo)

so true. God made food all kinds of colors except white. I forgot to mention rice - also brown in the natural state.

Just say no to white food! Except milk. :)
