We never cook the same thing twice.
I've been on a spinach and cheese kick recently too! Check out this lunch option:-Crusty (or stale) french bread, cut into cubes-Spinach, frozen or fresh (I chopped a corner off a frozen pkg.)-Feta (as much as you need/want)-Olives (I used sliced)-All drizzled with EVOO.AMAZING.I turned it into a dinner by changing the bread cubes into pasta, using the rest of the pkg of spinach (3/4?), Plenty of feta, 1/2 C. Olives and adding "Greek" meatballs: 1/2 lb Ground BeefDash of S&P1 t. Dried Mint1 t. Dried Onion(Either of these would be more fabulous if fresh)1/4 C. Oats(I was going to add Garlic but realized after cooking that I forgot, but I didn't notice it missing in the taste!)Mix, form into balls, fry up in some EVOO. Toss all of the above together and drizzle a tad more EVOO and you're all set. = YUM.
