I just revamped...

this recipe and it is oh-so-tasty.

Highly recommended if you're in the mood for something Greek-flavored, cheesy, or just downright comforting.

I've been on a spinach and cheese kick recently too! Check out this lunch option:
-Crusty (or stale) french bread, cut into cubes
-Spinach, frozen or fresh (I chopped a corner off a frozen pkg.)
-Feta (as much as you need/want)
-Olives (I used sliced)
-All drizzled with EVOO.
AMAZING.
I turned it into a dinner by changing the bread cubes into pasta, using the rest of the pkg of spinach (3/4?), Plenty of feta, 1/2 C. Olives and adding "Greek" meatballs:
1/2 lb Ground Beef
Dash of S&P
1 t. Dried Mint
1 t. Dried Onion
(Either of these would be more fabulous if fresh)
1/4 C. Oats
(I was going to add Garlic but realized after cooking that I forgot, but I didn't notice it missing in the taste!)
Mix, form into balls, fry up in some EVOO. Toss all of the above together and drizzle a tad more EVOO and you're all set.
